Grapes are harvested @ 24 Brix

Grapes are dipped in potassium carbonate & vegetable oil mixture called dipping solution for 5 minutes

Vegetable oil makes pores in the grapes, potassium carbonate helps in evaporating water from the grapes

Grapes are then spread on the shed for drying

On 3rd day same concentration of dipping solution is sprayed over the grapes.

On 6th day half concentration of dipping solution is sprayed over the grapes.

By 9th or 12th day, grapes are nicely dried up and ready for the destemming( rubbing with the pipe)
